Venezuela tiene enormes posibilidades de convertirse en un país gran productor de carne y quesos, si hacia ese fin se orienta nuestra ganadería en los Llanos. Sobre la base de esta premisa vamos a hablar sobre una alternativa de producción de estos rubros. El búfalo animal poco conocido y de reciente introducción en el país.
CLASIFICACION Y ORIGEN
El búfalo doméstico o búfalo de agua (Bubalus bubalis) pertenece a la familia Bovidae, subfamilia Bovini, genero Bubalus y especie bubalis. Se sabe con certeza que es uno de los animales domésticos más antiguos que existe. Su origen data de hace 5000 años. Muchos investigadores afirman que fue domesticado en la India en el Valle del Indus. Luego se fue expandiendo a otros continentes como Africa, Europa y Oceanía, siendo América el último continente donde fue introducido.
El BUFALO EN EL MUNDO
La población de búfalos en el mundo es estimada entre 130 y 150 millones de animales. India tiene la mitad de estos animales, le sigue China con aproximadamente 20 millones y Pakistán con 12 millones. Otros países de Europa, África y América conforman el resto de la población del mundo
FOMENTO DE LA CRIA DE BUFALOS EN VENEZUELA
Año 1920 el general Juan Vicente Gómez importa de Trinidad un lote de 22 bubalinos. Un grupo tuvo como destino la isla de Guara y otro lote fue a la finca Casupito , propiedad de la familia González Gorrondona en el Estado Aragua.
Año 1960 Pedro Arturo Omaña y Francisco Nuñez importan 6 parejas de búfalos sin ninguna trascendencia.
Año 1967 por recomendación del Dr. Abelardo Ferrer Domingo, Director de los Centros de Recría del MAC, se importaron de Trinidad 50 hembras y 2 machos. A partir de esta fecha se inicia la cría de búfalos en Venezuela.
Años 1974 -1976 las familias Moser y Reggeti importaron lotes comerciales de Trinidad, Australia, Italia y Bulgaria.
Población actual: Según se registra hasta la fecha, han ingresado a Venezuela aproximadamente 4000 búfalos en los últimos 25 años, calculándose una población de 80.000 a 100.000 cabezas en el territorio nacional.
TIPOS Y RAZAS
El búfalo doméstico se puede clasificar en dos tipos: el de río y el de pantano. Ambos pertenecen a la misma familia, pero tienen diferentes hábitat. El búfalo de pantano posee largos cachos, es poco corpulento y es utilizado como animal de trabajo y productor de carne, se encuentra en el este meridional de Asia. El búfalo de río generalmente tiene cuernos pequeños y curvos y se encuentra en la parte oeste de Asia, Europa Oriental, Italia y América. Sus razas se han especializado en producir leche de alto contenido de grasa y también es utilizado para el consumo de carne

LA LECHE DE BUFALA
Los grandes atributos de la leche de búfala hacen que ésta sea utilizada para la elaboración de productos lácteos de alta calidad.
Las búfalas pueden producir leche en condiciones donde el ganado vacuno especializado no subsiste.
Las búfalas se pueden ordeñar tanto en sistemas de explotación tradicional (a mano), como en sistemas automatizados de ordeño.
El precio de la leche de búfala en el mercado internacional para la elaboración de productos lácteos llega a ser hasta 2.5 veces el valor de la leche de vaca, en Venezuela es 1.5 veces.
Los productos elaborados con leche de búfala son muy apreciados en el mercado internacional como en EEUU y el CARIBE, ya que en esos países no existe producción de leche de búfala.
EL BUFALO COMO PRODUCTOR DE CARNE
Características al sacrificio según la especie a los 24 meses de edad:
El búfalo posee una alta eficiencia en la conversión de alimentos en carne, superando en esto al vacuno.
El búfalo aprovecha, ampliamente, las zonas anegadizas y de pastos nativos, en donde el vacuno no prospera.
Estudios han demostrado que el vacuno tiene mayor rendimiento en canal que el búfalo, pero esto es insignificante ante el alto índice de crecimiento y engorde que poseen los búfalos.
Se ha demostrado que las características organolépticas de la carne del búfalo joven (menor de 3 años) son muy similares a las del vacuno, presentándose también esta similitud en la palatabilidad.
EL BUFALO DE AGUA COMO ANIMAL DE TRABAJO
El búfalo es un animal versátil, muy dócil y extremadamente fuerte.
En épocas remotas, el búfalo fue el más importante medio de transporte y de trabajo de labranza, en algunos países de Asia.
El Búfalo se puede utilizar como medio de transporte (sólo o con carreta), para arado y limpieza de canales, etc.
Hoy en día existen razones que justifican la utilización del búfalo como animal de trabajo; donde no hay maquinaria agrícola y/o de transporte, zonas en donde no puede operar la maquinaria agrícola (pantanos, topografía accidentada, etc.);para abaratar costos en donde el uso de maquinarias sería muy encarecido.
MANEJO SANITARIO EN LA CRIA DE BUFALOS.
El búfalo, a pesar de ser más resistente a las enfermedades que el vacuno, no deja de ser susceptible a éstas, por lo que el plan de vacunación se hace bajo los mismos esquemas que el vacuno, dependiendo de las enfermedades presentes en cada zona. (Aftosa, rabia, brucelosis leptospirosis)
Hay que hacer énfasis en que debido a sus hábitos acuáticos el búfalo es más susceptible en edades tempranas a los endoparásitos
CARACTERISTICAS DE COMPORTAMIENTO
Aspecto fundamental que debe ser tomado en consideración por los criadores de búfalos
Termorregulación corporal: Son menos eficientes que los vacunos en la regulación de su temperatura corporal. Sólo poseen el 10 % de las glándulas sudoríparas de los vacunos, son de colores oscuros, piel más gruesa y por lo tanto necesitan sombra o agua.
Gregarismo: Poseen el hábito gregario muy desarrollado, les gusta vivir en grupos lo cual facilita su manejo.
Machismo acentuado: Resulta difícil mantener más de un macho con un lote de hembras, con las siguientes excepciones:
a. Machos jóvenes (menores de 4 años)
b. Si los machos fueron criados juntos e introducidos al mismo tiempo al rebaño.
c. Si los potreros son lo suficientemente extensos para que tengan su grupo de hembras y su territorio propio.
Hábitos: Una característica bastante marcada, es la facilidad y rapidez con que aprenden tanto los buenos como los malos hábitos.
Estacionalidad Reproductiva: Se manifiesta en las pariciones, las cuales se concentran en determinados meses del año. Muy importante según el tipo de explotación ya sea de carne o de leche.
Amamantamiento colectivo: Las búfalas aceptan pasivamente amamantar bucerros de otras búfalas.
Marcación e Identificación: Se dificulta con el método tradicional de hierro candente. Recomendable utilizar métodos complementarios como aretes y tatuajes.
Manejo en corral : Se deben manejar con calma por ser más lentos en sus movimientos que los vacunos. Responden muy bien al silbido. Se recomienda manejar grupos pequeños en los corrales. No se deben usar garrochas por ser muy susceptibles a la electricidad. La manga de trabajo y el embarcadero deben tener en la parte inferior 60 cm y en la superior 90 cm.
EXPERIENCIAS EN EL DESARROLLO DE EXPLOTACIONES DE BUFALOS
CRUZ DEL BUFALO (APURE)
Grupo de 9 productores financiados por la banca privada en 1996
Lote de 20 búfalas lecheras y 1 toro (180 búfalas) financiados a 3 años. Los resultados al cabo de 4 años han sido excelentes.
PROGRAMA EN EL DELTA DEL ORINOCO
Grupo de 16 productores financiados por ente regional.
Lote de 25 búfalas lecheras y un toro (400 búfalas) financiados a 7 años. Los resultados iniciales son similares a los del programa de la Cruz del Búfalo.
FABUL (SUR DEL LAGO EL VIGIA)
Programa que persigue como objetivo principal la promoción y explotación comercial de la especie bubalina.
Consiste en captar capitales destinados a la adquisición de búfalas con el objetivo de colocarlas en fincas a través de diferentes tipos de convenios
A) Convenio inversionista
B) Convenio operador
C) Convenio cebador
Dicho programa ha colocado 650 búfalas en diferentes fincas del Sur del Lago
CONCLUSIONES Y RECOMENDACIONES
Venezuela posee inmensas superficies las cuales no han podido ser desarrolladas por sus condiciones de ser zonas susceptibles a inundaciones, donde el ganado vacuno no prospera, siendo el búfalo el animal para producir en estas condiciones.
En el país existen muchas explotaciones con experiencias probadas donde la utilización del búfalo como animal de doble propósito ha demostrado ser rentable.
Es muy importante informar tanto a los gobiernos regionales como al gobierno nacional que existe una alternativa en Venezuela para producir leche y carne a costos razonables.
El búfalo ha demostrado ser una solución para la producción de proteína animal (carne y queso) de pequeños y medianos productores.
Es de vital importancia para la proyección y conocimiento de esta especie la participación de las Universidades en programas de investigación en áreas como (manejo, sanidad, comercialización).
Los entes financieros deben tener políticas especiales (aumentar los plazos de los créditos para adquisición de búfalos) para financiar estos animales.
